Booking.com: Scaling AI Analytics with Cortex at Booking.com

Booking.com has scaled AI-powered analytics with Cortex from an initial PoC to an enterprise capability supporting more than 1,000 users and over 10,000 tables. In this session, we will share how we enabled Cortex and semantic layers centrally while maintaining strong governance, consistent business definitions and trusted access to data. Attendees will leave with practical insights into expanding governed AI analytics across a large organization.

Snowflake: One Platform, Any Model: Your Enterprise AI Infrastructure Layer

AI teams today are stitching together multiple vendor APIs, MCP servers, and model hosting solutions across a fragmented stack – each with its own security posture, billing relationship, and governance gap. Snowflake changes this.

In this session, we show how Snowflake’s Cortex REST API acts as a vendor-agnostic LLM router: a single, OpenAI-compatible endpoint that routes to multiple different models – all within the Snowflake security perimeter, with unified RBAC, zero data retention at inference time, and a single Snowflake credit contract.

We then explore Snowflake’s managed MCP gateway, enabled through the Natoma acquisition: a secure transit layer that enforces identity verification, audit logging, and security policy at the tool-call level – letting AI agents safely reach enterprise systems without breaking governance.

Finally, we tackle the business resilience and cost question: When does it make sense to move beyond shared API access and host your own model?

You’ll see how Snowflake CoWork gives every knowledge worker a personal agent that understands enterprise data from day one, answers complex “why” questions with cited research, and runs work on demand — while Cortex Code (CoCo) empowers builders to go from idea to production-ready pipelines, analytics, and AI apps in minutes, all in natural language.

AI-first BI focuses on agile, yet sharable and reproducible analytics supported by AI rather than rebuilding BI. While classical dashboards can surface data, they suffer from the passivity disadvantage – you can drill down into what has been prepared, but getting answers to “Why?” questions might require a lengthy request-rebuild chain. During this talk we will show you how to create, use and share BI outputs natively in Snowflake.

Hands-On-Lab: Data Intelligence with Snowflake CoCo - Build an End-to-End Application on Snowflake

OVERVIEW

In this hands-on lab, you’ll build a complete AI-powered retail analytics platform entirely within Snowflake — no external infrastructure required. Using Snowflake CoCo as your AI-assisted development environment, you’ll work through the full data lifecycle: stream real-time orders via Snowpipe Streaming, MERGE them into production tables with Gen2 Warehouses, transform them through a 3-tier Dynamic Tables pipeline, and serve them with Interactive Tables for low-latency point lookups.

You’ll build analytical models with dbt, monitor data quality with Data Metric Functions, and create custom CoCo skills for reusable workflows. Tie it all together with Snowflake CoWork — a conversational AI interface where a Cortex Agent orchestrates Cortex Analyst and Agentic Search to answer “what happened” and “why” from both structured and unstructured data. Finally, evaluate your agent with ground-truth datasets, implement row-level security, and expose your agent as a managed MCP server for external AI clients.

What You’ll Build

A production-grade AI-powered retail analytics platform on Snowflake — from raw data to conversational AI insights, entirely within a single platform. You’ll create dynamic transformation pipelines, interactive low-latency tables, dbt analytical models, a Cortex Agent that answers questions across structured and unstructured data, row-level security that works transparently through AI, and an MCP server that exposes your agent to external clients.
